My photographic gear when touring is kept very simple.
I always carry two cameras - a Panasonic Lumix TZ10 which fits easily in the hand for general snaps and which has a handy zoom feature plus a Fujifilm S9500 with inbuilt 28-300mm lens as well as two different cards on board making number of shots no problem.
Each camera has rechargeable batteries and I carry an extra set and the relative chargers, both multi-voltage so no worries worldwide.
Another item I carry is a Monopod (tripods are too messy to carry) for set shots in special circumstances so no shaking of the shot. If I am going to be doing any caving I carry a special flash for the Fuji that is capable of 90 feet range. Neither camera has interchangeable lens and this is a bonus as I don't have to worry about dust intrusion.
Both cameras are suitable for video but the Fuji is better as it has more capacity having the extra card and more sound capability.
You always have to consider that you don't have the time on tour to compose a shot so keep your gear simple and you will be very pleased with the results.

Tony, I do the same thing. After fussing with a heavy DSLR for a few tours, I replaced it with a superzoom hybrid (Sony Cybershot with 30x zoom) which has all the functionality of a DSLR without the hassle of interchangeable lenses. I also take the Olympus Tough TG2 which is an awesome little point and shoot. It fits nicely in my fanny pack and is great to take to meals so that I don't have to find a spot for the larger camera. I like that there's no fuss with getting the right settings with so little time at some sights. As you say, you just have to point and shoot and still get phenomenal pictures.

You have the right recipe, Chech.
I use the large Fujifilm DSLR as it is more suitable for special shots. Personally I have no problem with the extra size and weight as the many features enable shots from Macro to Infinity.
